BITTER GOURD FRIED RICE


INGREDIENTS

• Bitter gourd, chopped - 250 g 
• Vegetable oil - 1 tablespoon
• Tomato - 50 g 
• Mustard seeds - ½ teaspoon
• Curry leaves - a few
• Chilli powder - 1 teaspoon
• Coriander powder - ½ teaspoon
• Garam masala powder - ½ teaspoon
• Steamed rice with cumin seeds - 200 g 
• Coriander leaves, chopped - 2 tablespoon

 

Preparation

• Heat the oil in a kadhai (deep frying pan or wok) and add mustard seeds.
• Add curry leaves when the seeds begin to crackle and cook for a few seconds.
• Add the chopped bitter gourds and tomato, fry for a few more seconds.
• Add the chilli powder, coriander powder and garam masala powder.
• Mix well and cook on medium heat until the bitter gourd becomes soft.
• Add cooked rice, mix thoroughly and cook for one minute.
• Serve hot.
