BITTER GOURD FRIED RICE
• Heat the oil in a kadhai (deep frying pan or wok) and add mustard seeds.
• Add curry leaves when the seeds begin to crackle and cook for a few seconds.
• Add the chopped bitter gourds and tomato, fry for a few more seconds.
• Add the chilli powder, coriander powder and garam masala powder.
• Mix well and cook on medium heat until the bitter gourd becomes soft.
• Add cooked rice, mix thoroughly and cook for one minute.
• Serve hot.
