FRIED ASH PLANTAIN CURRY


INGREDIENTS

 

• Ash plantains (Alu Kehel) - 1 lb 
• Tumeric powder - 1/2 teaspoon
• Salt
• Oil to deep fry
• Curry powder - 1 teaspoon
• Cumin powder - 1 teaspoon
• Red onions, chopped - 2 
• Green chillies, chopped - 2 
• Fenugreek seeds (uluhal) - 1/4 teaspoon
• Curry leaves, Rampe
• Vinegar - 1 tablespoon
• Coconut milk - 1 cup 
• Salt to taste

 

 

Preparation

• Cut the plantains into 1 finger size pieces.
• Mix with salt and a pinch of turmeric.
• Deep fry till golden brown.
• Heat a pan with 1 tsp of oil.
• Fry the onion, curry leaves, fenugreek, rampe, green chillies till fragrant.
• Next add the rest of ingredients, except fried plantains.
• When the mixture comes to a boil, add the plantains.
• Add salt to taste.
• Cook for couple of minutes.
