PUMPKIN CHUTNEY


INGREDIENTS

  • Pumpkin - 750 g
  • Vinegar – ½ cup
  • Dates – 85 g
  • Ginger – 30 g
  • Garlic – 30 g
  • Sugar – 3 tablespoons
  • Chili powder – 1 tablespoon
  • Salt to taste
  • Dates if required

 

Preparation

• Cut pumpkin into small pieces and boil in water. Once boiled smash into a paste
• In ½ cup of vinegar grind ginger, garlic, chili powder, salt and dates in the proportions mentioned above
• Add pumpkin and sugar into a saucepan and the above mixture of vinegar, heat with constant stirring. When the mixture starts to thicken, add salt to taste and served.
